Elaboration
Manual harvest and destemming. Fermentation in terracotta amphorae with temperature control at 24/25 ºC, using indigenous yeasts from the vineyard itself. Maceration for 10 days and subsequent pressing. Malolactic fermentation in the same amphora and bottled in February 2025, after spending 16 months aging in the amphora with a veil of flor. It does not contain added sulfites. No clarification or correction has been carried out.
Tasting note
The color is dark red with brownish touches. On the nose, we have aromas of pastries. On the palate, the ripe fruit gives us complexity and character and the tannins are expressed with subtlety.
