Manual harvest and destemming. Part of it is fermented with the skins for 1 day in a stainless steel tank, using temperature control at 24/25 ºC for subsequent pressing. The remaining part is pressed directly with a traditional wooden press and subsequently fermented in a stainless steel tank without the skins, using temperature control at 18/19 ºC. No sulphites have been added nor has any clarification, filtration or correction been carried out.
Tasting note
The color is deep red. The aromas are soft and reminiscent of red fruits. On the palate, it is fresh with good ripeness.
